Dark Chocolate Mousse

6 oz semi-sweet chocolate chips
3 egg yolks (room temperature)
3 egg whites (room temperature)
4 TBSP unsalted butter
1 tsp vanilla extract
Directions
- Melt the butter and chocolate, stirring on low heat in a skillet.
- When melted, remove the pan from the burner.
- Stir in the egg yolks, one at a time until mixed in well.
- Stir in the vanilla extract.
- In a medium bowl, beat the egg whites until stiff.
- Gently fold the chocolate into the egg whites using a whisk.
- Spoon the mousse into individual dessert bowls
- Chill the mousse for several hours before serving. Mousse can be made the day before serving.
- Serve the mousse with freshly made whipped cream or garnished with raspberries or strawberries.
- You can freeze the chocolate mousse to keep it fresh for weeks.
