Dark Chocolate Mousse

Ingredients

  • 6 oz semi-sweet chocolate chips

  • 3 egg yolks (room temperature)

  • 3 egg whites (room temperature)

  • 4 TBSP unsalted butter

  • 1 tsp vanilla extract

Directions

  • Melt the butter and chocolate, stirring on low heat in a skillet.
  • When melted, remove the pan from the burner.
  • Stir in the egg yolks, one at a time until mixed in well.
  • Stir in the vanilla extract.
  • In a medium bowl, beat the egg whites until stiff.
  • Gently fold the chocolate into the egg whites using a whisk.
  • Spoon the mousse into individual dessert bowls
  • Chill the mousse for several hours before serving. Mousse can be made the day before serving.
  • Serve the mousse with freshly made whipped cream or garnished with raspberries or strawberries.
  • You can freeze the chocolate mousse to keep it fresh for weeks.
