Weight Loss Italian Chicken Vegetable Soup

Ingredients
Chicken Broth, unsalted: 8 cups
Carrots: 4-6 medium size; peeled and chopped into small pieces
Onions: 2 cups chopped coarsely
Red Cabbage: 2 cups chopped coarsely
Tomatoes: 2 large tomatoes; chopped into 1 to 2 inch pieces
Garlic cloves: 3 cloves minced
Cooked Roasted Chicken: 2 cups, cut up into small pieces
Fresh Spinach leaves: 2 cups chopped coarsely (optional)
Pasta: 2 cups of cooked pasta: angel hair pasta (cut into small pieces), noodles or any other small pasta
Thyme: 1 tsp powder or 2 TBSP fresh chopped thyme
Basil: 2 tsp powder or 3 TBSP fresh chopped basil
Oregano: 1 tsp powder or 2 TBSP fresh chopped oregano
Salt to taste: Pink Himalayan Salt for best flavor and nutritional value
Cayenne Pepper: ¼ - ½ tsp or to taste
Directions
- Bring chicken broth to a boil in a large pot.
- Add carrots, onions and red cabbage to the pot and lightly boil for 10 minutes.
- Add tomatoes, minced garlic, chicken, thyme, basil and oregano. Lightly boil for another 10 minutes.
- Stir in the cooked pasta and spinach leaves.
- Season to taste with salt and cayenne pepper.
- Enjoy!
Notes
- For a vegetarian version of this soup, use vegetable broth instead of chicken broth and don't add the chicken.
